Discover Mondi: Curaçao’s soul food with a twist

WILLEMSTAD - Mondi, a vibrant Caribbean-inspired restaurant associated with Corendon, is set to expand its flavorsome presence to Curaçao, adding a local touch to its culinary empire. Known for its masterful fusion of Caribbean dishes, Mondi brings Curaçao’s soulful warmth to the heart of every dish, combining tradition with modern flair. This unique dining experience has already gained popularity in the Netherlands, with five locations in Amsterdam and Rotterdam. Soon, Curaçao will also savor its own slice of Mondi, with the restaurant opening in the Corendon hotel in Otrobanda.

At the helm of this culinary journey is Curaçaoan master chef Justin Niessen, whose passion for Curaçao’s soul food shines through in every dish. Born and raised on the island, Niessen moved to the Netherlands at the age of eighteen to pursue his studies at hotel school. His deep connection to his Caribbean roots is evident in his cooking. “I love the combination of Caribbean food with a twist,” he shares. “I have fond memories of my childhood, when as a little boy I could regularly be found in the Mondi with my friends. I use the feeling of freedom and tranquility that this environment gives me as inspiration to create new dishes.” 

Niessen's culinary inspiration draws from his island upbringing and the flavors that shaped his palate. The Mondi menu is a tribute to traditional Curaçaoan dishes, featuring delights like cheese balls, stewed meats, fried fish, and ta classical funchi hasá (fried polenta). Each dish is presented with a modern twist, bringing a fresh take on Caribbean comfort food while maintaining its authenticity. 

The upcoming Mondi location in Otrobanda promises to bring this unique blend of flavors to Curaçao, offering both locals and visitors a chance to enjoy the beloved cuisine that has captured hearts in the Netherlands. With its opening, guests will experience a celebration of Curaçao’s culture, served with the creativity and passion that has defined Niessen's culinary career.
